Zhoug is a yemenite chilli sauce with lots of garlic, coriander & parsley. This recipe makes a small pot and it keeps in the fridge for about two weeks. It’s fab on nachos!!
Ingredients:
4 green chillies
4 cloves garlic (the bigger the better)
1 heaped tsp cumin
1 large bunch of coriander (about a 25g packet)
A smaller bunch of parsley (about half a 25g packet)
Juice of 1/2 a lemon
1/2 tsp ground cardamom
1 tbsp pul biber (not essential, but tasty)
1/2 tsp salt – add more to taste
Olive oil
Method:
1. Add all ingredients to a food processor.
2. Blend together and add olive oil to reach the desired consistency.
3. Transfer to a pot and use it as a chilli sauce on nachos or pizza (yum), it’s also great with falafel, or even just as a dip with crisps or crudités.
